SWEET CREPE RECIPES

Chocolate Crepes

What do you need?

  • 4 eggs 
  •  1 cup cold milk 
  •  3/4 cup cold water 
  •  1 1/2 cups all-purpose flour 
  •  1/4 cup unsweetened cocoa powder 
  •  3 tablespoons sugar 
  •  1/4 teaspoon salt 
  •  1 teaspoon vanilla 
  •  3 tablespoons melted butter 

Intructions:

Mix the eggs, water, milk, flour, cocoa powder, sugar, salt, and vanilla until very smooth.  Add the butter and blend again for a few seconds.  Let the batter rest for 15 minutes. Cook for about 1 minute on medium heat until the surface of the crepe looks dry, then flip and cook for another 15-30 seconds, then transfer to a plate.  Repeat with remaining batter, stacking the crepes on top of each other to keep warm. Fill the crepes with your favorite ingredients. 

Crepes with Blueberry Sauce 

What do you need?

  • 1 batch of crepes 
  • 2 tablespoons melted butter  
  • 2 pints cleaned blueberries 
  • 1/2 cup sugar  
  • 1 teaspoon cornstarch  
  • Juice of 1 lemon  

Intructions:

Set batch of crepes aside. Mix the butter, blueberries, sugar, corn starch and lemon juice in a pan over medium-high heat and stir gently until the berries break down and release their juice. The consistency should remain a bit chunky. Use it as a filling for the crepes alongside whipped cream. 

Crepes with Strawberry Sauce 

What do you need?

  • 1 batch crepes 
  • 3 cups cleaned fresh strawberries 
  • 1/2 cup sugar  
  • 1/2 cup water  
  • 1 tablespoon cornstarch  
  • A pinch of salt  
  • 1 teaspoon butter  
  • Fresh mint (optional) 

Intructions:

Set batch of crepes aside. Crush 1 cup of strawberries. Thinly slice 2 cups of strawberries and set aside. Mix crushed strawberries, sugar, water, corn starch and salt in a pan over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute. Add butter and sliced berries, stir, and set aside. Use it to top crepes or as a filling with fresh mint. 

Cinnamon Apple Crepes 

What do you need?

  • 1 batch of crepes 
  • 4 peeled and diced Granny Smith apples 
  • ½ cup sugar 
  • 2 teaspoons cinnamon 
  • 2 tablespoons water 
  • 2 tablespoons cornstarch 
  • 1 tablespoon water 
  • 1 ½ tablespoons milk 
  • 8 teaspoons vegetable oil 

Intructions:

Set batch of crepes aside. Mix apples, sugar, cinnamon, and water in a pot. Whisk cornstarch and 1 tablespoon water in a small bowl; pour into apple mixture. Simmer apple mixture over medium heat, stirring often for about 8 to 10 minutes. Whisk the milk into chilled batter. Spoon the apple filling into the center of each crepe; fold over the crepe. 

Banana Crepes

What do you need?

  • 1 batch of crepes  
  • 1/2 cup butter 
  • 2/3 cup sugar 
  • 4 teaspoons grated orange zest 
  • 2/3 cup orange juice 
  • 6 peeled and sliced firm bananas 

Intructions:

Set batch of crepes aside. Place butter, sugar, orange zest and orange juice in a skillet; bring to a boil, stirring until sugar dissolves.  Reduce heat and add bananas. Use it as a filling for crepes.
