Our kids get so excited when they see that Corn Dogs are on the cafeteria menu at school. Since we try to send them off to school with a healthy meal packed in their lunch box we decided to try out this fun idea Corn Dog Cupcake recipe at home.
This recipe made both them and Mom happy! We were able to give them what they were craving with this healthier alternative.

1. Gather Your Ingredients
– Boxed corn bread mix (we used Jiffy’s)
– Pre-cooked hot dogs
In a large bowl mix together your corn bread as per the instructions on the back of the box or you could use your own favorite corn bread recipe. You want the recipe to be almost like a thick pancake mix consistency.
2. Place & Pour
Cut your hot dogs into thirds and place them standing in the center of your cupcake maker. Then pour in your corn bread mixture around the hot dog thirds. You want to make sure to fill the entire cupcake cavity so that when the corn bread raises it completely covers your hot dog.
Bake for 10 minutes!
3. Ketchup & mustard anyone?
Remove your corn dogs with a silicone spatula and serve them warm with some ketchup & mustard for dipping.
These Corn Dog Cupcakes are a great after school snack or lunch surprise. The kids love biting into them and finding the hot dog hidden inside!
