Easter’s Classics – Yummy Carrot Cake Cupcake Recipe

Give these carrot cake cupcakes, perfectly topped with cream cheese, to your favorite Easter bunnies this year!

Step 1: Gather Your Ingredients & Mix Them Together

Gather up the following ingredients:

  • 2 eggs
  • 1/2 cup oil
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1 tsp cinnamon
  • 3 cups grated carrots
  • 1 cup chopped pecans

Mix them well together is the key to the success of making this delicious treat.

Fold in your carrots and pecans last!

Step 2: Pour in Your Cupcake Maker

Next, pour the mixture into your cupcake maker and bake for 7 minutes.

Step 3: Spread the Frosting

You can prepare a simple cream cheese frosting by mixing together 2 cups powdered sugar, 8oz cream cheese, 1 tbsp vanilla extract and 1 stick of butter.

Finally, you can use the silicone spatula to spread the frosting over the cupcake evenly. If you love cream cheese frosting a lot, you can double the frosting. Having a little extra has never been a problem. Enjoy!
