Chocolate Peanut Butter Breakfast Muffins


These protein packed breakfast muffins are a great pick me up if your like us and not a morning person. We prepared ours the night before, but they just take 7 minutes to bake.

1. Gather Your Ingredients

– 3/4 cup flour

– 2tbs cocoa powder

– 1/2 tsp baking soda

– 1/4 ts salt

– 1 large banana mashed

– 2 eggs

– 1/4 cup creamy peanut butter

-1/2 tsp vanilla extract

– 1/4 cup mini chocolate chips

2. Mix & Scoop

In a large mixing bowl mix your dry ingredients together. In a small bowl mash your bananas and them mix everything together in your large bowl. Your mixture should be a smooth creamy chocolate color.

Scoop about 2 tbsp of batter into each cupcake liner and bake for 7 minutes. With the Holstein Cupcake Maker you can choice to bake with or with out liners, it’s up to you!

3. Serve & Enjoy

Remove your breakfast muffins using a silicone spatula. Allow them to cool down before sinking your teeth into the protein packed pick me up!

They are best when you make them the night before you plan on enjoying them and they make a great on-the-go or grab-and-go breakfast.
