Summer Popsicle Recipes

As the school year comes to and end and the days seem to get hotter we have turned to being big fans of healthy home-made popsicles. They are a great way to get the kids to cool down & to enjoy something not fully or artificial colors & sugars!

We have rounded up our favorite summer pop recipes but you can also find more Popsicle recipes on our Pinterest Board.

FRESH FRUIT POP
To make these deliciously fruity pops what you’ll need will be:

1 peach, cut into 1/2-inch slices (1/2 cup)

2 kiwis, peeled and sliced into 1/4-inch rounds

3/4 cup strawberries, finely chopped

1/2 cup blueberries

1/2 cup raspberries

1 1/2 to 2 cups of fruit punch or 100-percent white-grape juice

BLACKBERRY YOGURT POP

A perfect blend of tangy & sweet, these popsicles aren’t as easy to prepare as the rest but they are well worth the extra effort.

Here are the ingredients you’ll need:

2/3 cup water

2/3 cup sugar

3 6-ounce containers fresh blackberries (3 1/2 to 3 3/4 cups)

1 cup plain nonfat yogurt (preferably organic)

5 teaspoons honey

1 tablespoon fresh lemon juice

CHUNKY MONKEY POP

These were made for the sweet tooth! The frozen bananas add a creamy & icy touch that makes them all the more refreshing.

To prepare these you’ll need quite a few different ingredients to make the different yummy layers.

Popsicles:

1/4 cup chocolate syrup

3/4 cup milk

2 tablespoons peanut butter

Magic Shell Coating:

3/4 cup chocolate chips

2 tablespoons coconut oil

Toppings:

1 banana

1/2 cup chopped peanuts

COOKIE DOUGH POPS

These are so easy & so delish, it just isn’t fair! We want to make them every day!

Here’s what you’ll need:

2 1/2 cups milk

2/3 cup light brown sugar, packed

couple pinches salt

2 teaspoons pure vanilla extract

1/4 cup + 1 teaspoon mini chocolate chips
