National Cupcake Week is next week and as you know we have been preparing all month long for it with our 100 calorie cupcake recipes. This was the 2nd recipe that we tried and even though we loved the chocolate ones, our kids liked these more.
Maybe it’s because our kids are “plain” kids. They like their hamburgers plain, their pizza plain and apparently their cupcakes plain.
None the less this recipe is a great base recipe. It provides you with a sweet little craving crusher cupcake.

1. Gather Your Ingredients
5 egg whites
1 pinch of salt
3 tbsp honey
2 tbsp of vanilla extract
¼ cup fat free greek yogurt
½ cup of whole wheat flour
1 tbsp of baking powder
Begin by beating your egg whites. Then add in your vanilla and honey and beat until it begins to peak, it should be nice and fluffly at this point! Then gently fold in your yogurt.
2. Mix Together
In a separate bowl mix your dry ingredients together. Sift them into your fluffy egg white mixture and use your hand mixer to beat everything well together.
3. Pour & Bake
We poured our batter into our batter bottle for a messy free pour. Then we filled our cupcake liners up and baked for 7 minutes. The cupcakes smell so good while baking!
You can add a low-fat cream cheese frosting on top of your cupcakes to make this low calorie sweet tooth craving complete.
