100 Calorie Oatmeal Cupcake

Did you know that oatmeal was one of the most healthy and powerful grains? For our third and final recipe for this month we made Oatmeal Cupcakes, and yes they were delicious and just under 100 calories! Our bodies were thanking us for stumbling upon this scrumptious cupcake recipe.

1. Gather your ingredients

– 2 ½ cups of old-fashioned rolled oats.
– 1 teaspoon baking powder
– ½ teaspoon kosher salt
– 1 teaspoon cinnamon
– 2 tablespoon butter, melted and cooled
– 2 cups milk
– 1 egg
– ¼ cup maple syrup

2. Mix It All Up

In a large mixing bowl combine your dry ingredients together. Then in a small mixing bowl mix your milk, maple syrup, egg and butter.
Gently add your wet mixture into your dry. Make sure that all your oats are covered with the wet mixture. It will look runny at first, but keep mixing until your oats start to soak up the liquid and the mixture gets a bit dense. It should look like oatmeal!

3. Pour & Bake

Add your mixture into your Holstein Cupcake Maker and allow to bake for 7 minutes. The room will start smelling of sweet oats and you’ll be tempted to open up your maker, but keep it closed. We promise you, it’s worth the wait!
